

Mediterranean Chopped Salad with Tuscan Lemon Herb Vinaigrette
Fresh, vibrant, and full of bold flavor—this Greek-inspired salad gets a gourmet upgrade with our Tuscan Herb Infused Olive Oil and Sicilian Lemon White Balsamic Vinegar. Perfect for Summer!
Ingredients
For the Salad:
- 1 English cucumber, sliced
- 1 cup cherry or grape tomatoes, halved
- ½ cup Divina Organic Pitted Kalamata olives
- ⅓ cup feta cheese, crumbled
- ¼ cup thinly shaved red onion
For the Vinaigrette:
- ¼ cup Tuscan Herb Infused Olive Oil
- 2- 3 tbsp Sicilian Lemon White Balsamic Vinegar
- 2 tbsp juice from the Kalamata olive jar
- 1 tsp dried oregano (optional)
- Salt & cracked black pepper, to taste
Optional Creamy Twist:
- Add 1–2 tbsp crumbled feta to the vinaigrette and mash it before shaking.
Instructions
- Prep the veggies: In a large bowl, combine cucumbers, tomatoes, olives, red onion, and crumbled feta.
- Make the vinaigrette:
- In a mason jar, add Tuscan Herb Olive Oil, Sicilian Lemon Balsamic, Kalamata olive juice, oregano, salt, and pepper.
- Optional: Add crumbled feta for a creamy version.
- Shake vigorously until well combined.
- Toss and serve: Drizzle dressing over salad and toss gently to coat. Serve immediately or chill for 15 minutes for deeper flavor.
Serving Suggestion:
Pair with warm pita or grilled chicken for a complete meal!
