Heart Shaped Caprese Skewers
The heart-shaped tomato in these Caprese Skewers will add a special touch to any occasion, especially for any upcoming Valentine’s Day plans! Show that special someone some extra love with these fresh and flavorful skewers. Better yet, they are easy to make and the perfect bite size appetizer! We also love adding these to charcuterie boards and grazing plates.
Ingredients:
12 Grape Tomatoes
6 Mini Mozzarella Balls
4 large Basil Leaves, washed and dried
1/4 – 1/2 cup Neapolitan Herb Dark Balsamic Vinegar
Garlic Infused Olive Oil
Salt and Pepper
12 Bamboo Skewers
Directions:
Slice the mozzarella balls in half and place in bowl. Drizzle the cheese with olive oil to coat. Roll the basil leaves in a tight cylinder and slice thinly. Add the basil to cheese and oil, mix thoroughly and set aside. For best results, let marinade for 30 minutes or more in refrigerator. In small sauce pan add the Balsamic Vinegar and cook on medium heat until it boils. Reduce heat and let simmer for approximately 10 minutes. Remove from heat and let cool. Mixture will thicken upon cooling.
Take the tomatoes and cut them at a diagonal angle. Invert one of the slices of the tomatoes so that the points meet, this will be the base of the heart. Begin assembling skewers by placing one slice of marinated mozzarella on skewer, then two pieces of tomato making sure the top and bottom align to form the heart, and finally another slice of mozzarella. Continue the process and plate the 12 skewers on a platter. Drizzle the balsamic reduction over the skewers or serve it on the side! Enjoy!
